Spicy eggs and sweet potato

serves 2


1 large sweet potato

1 clove Β crushed garlic

1 small chopped red chilli

x4 eggs


Peel and grate the sweet potato

Place in a fry pan with 2 tsp of coconut oil

Add in the garlic and sweet potato

Cook on low heat for approx 20min. Toss often.

Poach 4 eggs.

Add sweet potato to a plate and top with 2 poached eggs

Add a pinch of salt and pepper if desired. YUM πŸ˜›

250g Mixed nuts-roughly chopped (unsalted)

150g Coconut flakes

1/3 cup Cacao

3 Tbsp Rice malt syrup

75g Coconut oil (melted)



Mix all ingredients together

Spread a thin even layer on a tray and roast at approx 160 degrees until golden crisp

Stir at about 10-15min.

Wait for it to cool then Eat πŸ™‚

10-15 servings

Store in air tight container or put in fridge.

Great way to add some crunch to a bowl of oats or yoghurt or simply makes for a great snack all by its lovely self πŸ˜€
